Where is Jenner Family Beef located?

We are nestled in the middle of the mountain valley, called Scott Valley, located in Siskiyou County, California.

Siskiyou County is the most northern county of California, bordering Oregon.

Our ranch has been in business since 1872. For more than five generations, the Jenner Family has called Etna, California home.

 

What breed of cattle do you raise?

We raise black angus beef, born and ranch-raised on our ranch located in Etna, California.

Our cattle herd is considered a closed herd, which means they never leave our ranch, from birth until sale. We do not purchase feeder cattle. All our beef are born, raised and finished on our ranch.  

The only new animals that are introduced are virgin bulls, which are selected for breeding dynamics and genetics, including marbling, flavor, good nature, and calving ease. 

 

What about hormones and antibiotics?

Our cattle are certified 100% Natural beef.  This certification is granted through the annual audit and program verification through an independent third-party Ranchers Connecting Ranchers (www.ranchersconnectingranchers.com). Cattle certified in this program are never fed an animal by-product, are never given steroids or added hormones, and have never been treated with antibiotics.

However, our animals’ well-being always comes first, and on the rare occasion one becomes sick, we will administer medications, in accordance with our vet recommendations, to ensure a healthy recovery.  When this occurs, the animal is tagged, not marketed as natural and sold through other avenues.

 

Do you grass or grain-finish?

Our cattle spend their whole lives on grass, roaming and grazing on native pastures.  A few months before harvest, we offer free-choice, homegrown chopped barley, while still on pasture.  We believe this grain option contributes to the marbling, tenderness, and flavor that our beef is known for.  We guarantee this will be some of the healthiest and tastiest beef you have ever had.

It is important to note that 100% of the hay and grain fed to our animals is grown and harvested on our own land.  We utilize past seeds to replant native pasture grasses; we rotate hay and grain crops to maintain soil health; and we use modern irrigation methods to ensure efficient usage of water supply, as well as recycle water where we can.  These practices have been employed for generations on our ranch, resulting in a highly efficient system, as well as incredible flavorful beef.

 

How is our beef processed?

Our beef is harvested locally at a first class, USDA inspected facility.  The facility focuses on a no-stress handling and quick, humane harvesting.

 

What is a beef share?

A beef share is your opportunity to reserve a guaranteed share of one of our ranch-raised 100% Natural Certified Angus Beef. 

We offer shares of 1/8 beef, 1/4 beef, half beef and whole beef. All cut details and pricing can be found on our Shop page.

You place a deposit for the size share that fits the needs of your family; when your delivery date is scheduled we will send you a final balance due invoice to be paid prior to shipping or delivery.

We only sell as many shares as we have animals ready for harvest.  We let the cattle grow at their own natural pace, never pushing feed to speed up finishing time.

 

How much freezer space do I need?

A general rule of thumb is to estimate 30-35 lbs. of beef fits in 1 cubic foot of storage. 
 

  • 1 /8 beef share requires approximately 1.5 to 2.0 cubic feet of freezer space (estimated to use half the space of a regular fridge-freezer compartment)

  • 1 /4 beef share requires approximately 3.5 to 4.0 cubic feet of freezer space (small chest/upright freezer)

  • 1 /2 beef share requires approximately 6.0 to 8.0 cubic feet of freezer space (large chest/upright freezer)

  • Whole beef share requires approximately 14.0 to 16.0 cubic feet of freezer space (large chest/upright freezer)

 

How is buying bulk beef different from grocery store beef?

Buying beef in bulk is a great way to insulate yourself from ever fluctuating beef inventory and prices at the grocery store. A freezer full of beef offers you peace of mind through food security and flexibility with what to cook for dinner. 

Bulk beef also gives you greater control over the quality and quantity of your food supply.  This ensures you know exactly where your meat comes from with a high level of transparency. Purchasing directly from a ranch offers you the opportunity to develop a connection and relationship with your rancher.

 

Do I get to customize my own cut sheet?

We have a standardized cut list that we use with our butcher and our customers love it.  Let us take the burden of 50 decisions and cut options off your shoulders with our custom cut list.

 

How is our beef wrapped and packaged?

All our cuts are USDA inspected and wrapped in individual vacuum sealed packages. 

 

How should I store my Jenner Family Beef?

Your beef is vacuum-sealed to lock in freshness and prevent freezer burn. Your beef should be kept in a freezer storage (0 degrees F/ -18 degrees C or below) until you are ready to defrost and prepare it. Your beef can be safely stored as follows:

  • Steaks & Roasts: Best enjoyed within 12-18 months

  • Ground Beef: Best enjoyed within 9-12 months

  • Beef can be stored frozen longer than the recommended time frames and still be safe to eat, as long as it stays continuously frozen. Over time, flavor, texture, and moisture gradually decline. You may notice a drier texture, slightly muted flavor and there is increased chance of freezer burn (if packaging is damaged). That's why the recommended time frames are about peak eating quality, not food safety.

How long does beef last after thawing?

Keep thawed beef refrigerated at 34-40 degrees F and in its original vacuum-sealed packaging until ready to use.

  • Ground beef: Use within 1-2 days

  • Steaks & roasts: Use within 3-5 days

 

What is the best way to thaw beef?

  1. Refrigerator Thawing (Best Method) - Place beef on a plate or tray in the refrigerator.

  • Small cuts: 12-24 hours

  • Large roasts: 2-4 days

 2. Cold Water Thawing (Faster Option)

  • Keep beef sealed

  • Submerge in cold water

  • Change water every 30 minutes

  • Cook immediately after thawing

  1. Cooking from Frozen - Many cuts can be cooked from frozen. Roasts can go straight into a roasting pan with seasoning and liquid added; simply allow extra cooking time.

Can I refreeze beef:

Yes. Beef thawed safely in the refrigerator and kept cold can be refrozen. While there may be a slight decrease in quality, it remains safe to eat.

 

How do you collect payment for the purchase of bulk beef share?

We offer two payment options for the purchase of bulk shares:

  • Payment in full at the time you reserve your share.

  • 30% Deposit paid at the time you reserve your share, balance due to be received prior to shipping.

We will not ship your beef until we receive final payment.

 

Do you offer refunds?

How do you ship your beef?

We ship our beef with dry ice in an insulated, lined box to keep your meat frozen.  Your beef is guaranteed to arrive frozen, ready to fill your freezer upon delivery.

Your delivery may arrive in multiple boxes depending upon the size share purchased.

We use insulated liners made from over 95% post-industrial content, this earth-friendly insulation is curbside recyclable with paper and cardboard. It offers exceptional insulating value as well as cushioned protection for your beef.

We will message you when your beef is ready and send you your final invoice for payment and again when your beef ships.  All orders are shipped with a tracking number so you can track it every step of the way.  There are no surprises.

 

What if I’m not home when my shipment arrives?

No signature is required for delivery.  Your boxes will be packed with dry ice to ensure a frozen arrival; however, we strongly recommend you unpack your delivery and move it to freezer as soon as possible.
